Lemon Protein Balls are super soft and easy to make with fresh lemon and coconut. For the perfect healthy and satisfying no-bake treat to have on hand!

Lemon Protein Balls

These coconut lemon protein balls can be easily made keto-friendly. They are gluten-free, vegan, and dairy-free. They make great light spring treats to have on hand. In the spring, I start to crave lemon and coconut. Which was the inspiration behind this recipe. And trust me lemon and coconut are an amazing flavor combination.

  1. Scoop coconut oil into a medium microwave-safe bowl. Heat oil in the microwave until melted. Let cool slightly.
  2. Add maple syrup, vanilla, lemon juice and zest. Stir to combine.
  3. Add in almond flour, ¼ cup of shredded coconut, and protein powder if using. Stir until completely combined.
  4. Scoop 2 tbsp of dough and roll batter into balls. If the dough is too soft, refrigerate until firm enough to roll into balls.
  5. Add ¼ cup of shredded coconut to a small bowl. Roll the balls in coconut to coat the outside of the balls. Refrigerate to harden. Serve chilled.

  • Collagen powder or plant-based powder
  • Add crushed nuts like almonds, cashews, or macadamia nuts
  • Add chia or poppy seeds

Keto Lemon Protein Balls

To make the recipe keto, substitute maple syrup for keto monkfruit maple-flavored syrup from Lakanto.

Storage

Store in an airtight container in the refrigerator for up to 1 week.

Freeze in an airtight container for up to 3 months. Thaw before serving.

  • â…“ cup maple syrup
  • 1 tsp vanilla extract
  • 1 lemon juice (approx 2 tbsp) and zest
  • 2½ cups almond flour (superfine blanched)
  • ¼ cup shredded coconut unsweetened divided
  • 1-2 tbsp vanilla protein powder optional

  • Scoop coconut oil into a medium microwave-safe bowl. Heat oil in the microwave until melted. Let cool slightly.
    Add maple syrup, vanilla, lemon juice and zest. Stir to combine.
    Add in almond flour, ¼ cup of shredded coconut, and protein powder if using. Stir until completely combined.

    Can you tell me how much protein is in 1 ball?

      It would depend how much protein powder you put in and also on what kind of protein powder. If you used 1 tablespoon of powder you would get approximately 2.8g of protein per ball.
