Cherry Pistachio Energy Balls

Cherry Pistachio Energy Balls are a quick, healthy snack with pistachios, dates, and dried cherries.

They are the perfect snack to take hiking, on road trips, and camping. They are vegan friendly with only 3 ingredients. Since they are made from just nuts and dried fruit, no need to refrigerate.

Dried Cherries

Dried cherries contain vitamins A, C, and E which are immune-boosting vitamins. Everyone in my house is currently sick so we could use all the extra vitamins and minerals we can get. It seems like more people were sick this winter than ever. Everyone I know was sick multiple times. But the end is in sight and it is finally Spring, yay!

Pistachios

Archaeological evidence in Turkey indicates pistachios were being used for food as early as 7,000 B.C. That is kind of mind-blowing! Pistachios contain fiber, protein, unsaturated fatty acids and antioxidants. They are lower in fat and calories than many other nuts and contain just 3 calories per nut.

Dates

Dates contain antioxidants, fiber, vitamin B, magnesium, potassium, iron, and other nutrients.

So basically these 3 ingredients are a powerhouse of nutrients your body needs.

Ingredients in Cherry Pistachio Energy Balls

Only three ingredients needed to make these fruit and nut balls- pistachios, dates, and dried cherries.

  • Pistachios
  • Dates
  • Dried Cherries

How to Make Cherry Pistachio Energy Balls

  1. Combine pistachios, dates, and cherries in a food processor or blender.
  2. Pulse mixture until nuts and fruit are broken down into a sticky mixture. Scrape down the side and pulse until the desired consistency is achieved.
  3. Form dough into 1 1/2 inch balls.

Tips

  • The mixture is very sticky. You will have to scrape down the sides and re-pulse.
  • If you want the pistachios smaller and finer; pulse the pistachios into the desired size first before adding the dates and dried cherries.

Tasted and tested, they are toddler approved!

These Cherry Pistachio Energy Balls are a quick, healthy snack with pistachios, dates, and dried cherries.

Equipment

  • blender or food processor
  • spatula

Ingredients

  • 1 cup salted roasted pistachios shelled
  • 1 cup dried cherries
  • 1 cup pitted Medjool dates

Instructions

  • Add pistachios, dried cherries, and dates to a food processor or blender.
  • Pulse until the mixture is broken down and forms a sticky dough. Stop to scrape down the sides as needed.
  • Form the mixture into 1 ½ inch balls. About 18 balls(the mixture will be very sticky and should easily form into balls).
  • Store in an airtight container for up 2 weeks.
