Equipment

  • medium bowl
  • lemon zester
  • small bowl

Ingredients

  • cup coconut oil
  • cup maple syrup
  • 1 tsp vanilla extract
  • 1 lemon juice (approx 2 tbsp) and zest
  • cups almond flour (superfine blanched)
  • ¼ cup shredded coconut unsweetened divided
  • 1-2 tbsp vanilla protein powder optional

Instructions

  • Scoop coconut oil into a medium microwave-safe bowl. Heat oil in the microwave until melted. Let cool slightly.
    Add maple syrup, vanilla, lemon juice and zest. Stir to combine.
    Add in almond flour, ¼ cup of shredded coconut, and protein powder if using. Stir until completely combined.
    Scoop out approximately 2 tbsp of dough and roll the batter into balls. If the dough is too soft, refrigerate until firm enough to roll into balls.
  • Add ¼ cup of shredded coconut to a small bowl. Roll balls in shredded coconut to coat.
    Refrigerate to harden. Serve chilled.
  • Store in an airtight container in the refrigerator for up to 1 week.
