⅓cupcoconut oil
⅓cupmaple syrup
1tspvanilla extract
1lemonjuice (approx 2 tbsp) and zest
2½cupsalmond flour (superfine blanched)
¼cupshredded coconut unsweeteneddivided
1-2tbspvanilla protein powderoptional
Instructions
Scoop coconut oil into a medium microwave-safe bowl. Heat oil in the microwave until melted. Let cool slightly. Add maple syrup, vanilla, lemon juice and zest. Stir to combine.Add in almond flour, ¼ cup of shredded coconut, and protein powder if using. Stir until completely combined. Scoop out approximately 2 tbsp of dough and roll the batter into balls. If the dough is too soft, refrigerate until firm enough to roll into balls.
Add ¼ cup of shredded coconut to a small bowl. Roll balls in shredded coconut to coat.Refrigerate to harden. Serve chilled.
Store in an airtight container in the refrigerator for up to 1 week.
