Watermelon Mint Cooler

Beat the summer heat with an iced Watermelon Mint Cooler. Made with fresh watermelon, mint, and coconut water, it’s both hydrating and refreshing. And can also be made into a cocktail by adding your favorite vodka or white rum!

We are just days away from the first day of summer! With the scorching summer sun, you need to stay hydrated. With just three ingredients, a blender, and some ice; your good to go!

How to Pick the Perfect Watermelon

Since watermelon is the main ingredient in this delicious drink, you want to make sure to choose a good one. Watermelon is in season in the United States from May to September. Here are some things to look for to ensure you pick a ripe, juicy, sweet watermelon:

  • Check the stem area, look for a yellowy-brown stem. To ensure it had time to ripen on the vine before being picked.
  • It should have a large creamy light yellow spot on one side.
  • Knock on the watermelon and listen for a deep hollow sound. If it doesn’t sound hollow the rind is too thick or it’s not water-filled.
  • The watermelon should feel heavy for its size. Watermelon is 92% water so it should feel heavy.
  • Make sure it is uniform in shape with no lumps.

What Equipment do I need to Make Watermelon Juice?

All you need to make the watermelon juice is a high-speed blender. I used a ninja blender when I first made this recipe, but since got a Vitamix, and highly recommend it. I linked the Vitamix blender down below.

How to Make Watermelon Mint Cooler

  • Cut watermelon into chunks.
  • Place cubed watermelon, coconut water, and the mint leaves in a blender. Blend until the watermelon mixture is smooth and resembles juice.
  • Run the watermelon mixture through a sieve to remove the pulp, if desired. (You may need to rinse the pulp out of the sieve a couple of times if the sieve gets clogged).
  • Serve over ice immediately or chill until ready to drink!

Make it a cocktail by adding your favorite vodka, gin, or white rum.

  • 8 cups seedless watermelon cut into chunks
  • 10-12 ounces coconut water
  • 5-6 fresh mint leaves

Instructions

  • Cut watermelon into chunks.
    Place cubed watermelon, coconut water, and the mint leaves in a blender. Blend until the watermelon mixture is smooth and resembles juice.

  • Store leftovers in the refrigerator for up to a week. Stir before serving.
