Rhubarb Gin Cocktail is made with rhubarb simple syrup, gin, and club soda. A refreshing and tasty spring/summer drink!

This Rhubarb Gin Cocktail is easy to make and is great to use up that garden rhubarb. It has a unique flavor that pairs perfectly with gin! The rhubarb simply syrup is easy, taking just over 15 minutes to make. Once the syrup is made, this cocktail is so simple. Just add ice, gin, syrup, and club soda for a tasty and unique cocktail.

How to Make a Rhubarb Gin Cocktail

  1. Make rhubarb simple syrup. Heat a small saucepan on medium heat and add water and sugar. Stir to dissolve the sugar. Once the mixture comes to a boil, add chopped rhubarb. Cook for 10 minutes. Reduce heat to simmer for 10 more minutes. Cool.
  2. Make the cocktail. Fill a low ball glass ½-¾ full with ice. Add gin, rhubarb simple syrup, and top with club soda. Stir and adjust to taste.
  3. Garnish. If desired, use a vegetable peeler to peel the rhubarb stalk. Coil the rhubarb then stick it with a cocktail pick. Serve.

Tips/Variations

  • Use vodka instead of gin
  • Muddle up some fresh strawberries

How to Make Garnish for Rhubarb Gin Cocktail

Use a vegetable peeler to peel the rhubarb stalk. Wrap the rhubarb into a coil then stick a cocktail pick through the middle.

Store extra rhubarb syrup in an airtight container in the refrigerator for up to one month.

Rhubarb Simple Syrup

  • ¾ cup water
  • ¾ cup sugar
  • ¾ cup rhubarb- fresh or frozen leaves removed, chopped

  • 1-1½ shots gin
  • 2 tbsp rhubarb simple syrup or to taste
  • â…“ cup club soda
  • ice
  • garnish with rhubarb peel optional

Instructions

  • Start by making the rhubarb simple syrup. Heat a small saucepan on medium heat and add water and sugar. Stir to dissolve the sugar. Once the mixture comes to a boil, add chopped rhubarb. Cook for 10 minutes.
    Reduce heat to simmer for 10 more minutes.
  • Strain out the rhubarb using a strainer.
    Let cool before using or storing.
