The rhubarb simply syrup is easy, taking just over 15 minutes to make. Once the syrup is made, this cocktail is so simple. Just add ice, gin, syrup, and club soda for a tasty and unique cocktail.

How to Make a Rhubarb Gin Cocktail
- Make rhubarb simple syrup. Heat a small saucepan on medium heat and add water and sugar. Stir to dissolve the sugar. Once the mixture comes to a boil, add chopped rhubarb. Cook for 10 minutes. Reduce heat to simmer for 10 more minutes. Cool.
- Make the cocktail. Fill a low ball glass ½-¾ full with ice. Add gin, rhubarb simple syrup, and top with club soda. Stir and adjust to taste.
- Garnish. If desired, use a vegetable peeler to peel the rhubarb stalk. Coil the rhubarb then stick it with a cocktail pick. Serve.
