Lemon Vinaigrette Dressing

Way better than store-bought dressing, Lemon Vinaigrette Dressing is light and bright with fresh lemon. Use it as a salad dressing or a marinade for meats and vegetables. It uses only a hand full of ingredients and takes minutes to make.

I always bought salad dressing until recently when I finally realized how simple and quick it is to make. Check out my pomegranate vinaigrette which is also really yummy!

Why Make Dressing?

  • Quick to make
  • Minimal ingredients
  • No preservatives, unnecessary sugars, and weird ingredients you can’t pronounce.
  • Fresh taste

Ingredients in Lemon Vinaigrette Dressing

  • lemon zest and juice
  • avocado oil or olive oil. I prefer the taste of avocado oil because it has more of a subtle and light taste.
  • dijon mustard
  • garlic- because everything is better with garlic!
  • salt and pepper

How to Make Lemon Vinaigrette

This dressing is super easy to make!

  1. Zest and juice 1 lemon.
  2. Combine lemon zest and juice, avocado oil, dijon mustard, garlic, salt, and pepper. I like to use a mason jar and either shake or stir the ingredients together, but you can also use a small bowl.
  3. Use the dressing right away or refrigerate it until ready to use. Super simple right?

How to Store the Vinaigrette

Store in a mason jar or airtight container in the refrigerator. It will last at least a week in the refrigerator.

It can be made ahead of time and refrigerated until ready to use.

Separation is normal, give it a stir or shake just before serving!

Lemon Vinaigrette Uses

  • I love this dressing on an arugula salad. Place arugula in a bowl, with shaved parmesan, croutons and pour this dressing over and toss. It is a super simple, but tasty salad.
  • Other lettuce salads like spring mix, romaine, spinach, or kale.
  • My Crustless Quiche Lorraine.
  • This vinaigrette would also make a delicious marinade for vegetables or meat.

  • lemon juicer

  • 1 medium lemon zest and juice
  • ½ cup avocado oil or olive oil
  • ½ tsp dijon mustard
  • ½ tsp garlic minced
  • ¼ tsp cracked pepper
  • ¼ tsp salt

Instructions

  • Zest then juice the lemon.
  • In a small bowl or mason jar, combine lemon juice and zest, oil, dijon mustard, garlic, pepper, and salt.
  • Serve immediately or store in the refrigerator for up to 1 week.
    Shake or stir just before serving as seperation occurs.
