The inspiration behind this kale apple salad comes from my favorite bbq place. When I go there, I always enjoy my brisket or pulled pork with a kale salad with citrus dressing and mac and cheese! In the summer, we sit outside in the warm sun and enjoy this delicious salad with our bbq. The raisins and apples give it a slight sweetness. I love the fresh citrus flavor in the vinaigrette.

How to Make Kale and Spinach Salad with Apples
- Add baby kale and spinach mix to a large bowl.
- Grate/shred the cabbage and carrots. Add them on top of the lettuce.
- Add apples, pecans, and raisins.
- Serve with citrus dressing.

Dressing for Kale Apple Salad
Super simple to make! Just add all the ingredients to a jar, cover, and shake. Serve on the salad immediately or chill until ready to serve.

Store salad dressing in an airtight container in the refrigerator for up to 1 week.

Ingredients
- 8 ounces baby kale or kale/spinach mix
- 1 cup red cabbage shredded
- 1 cup carrots shredded
- 1 red apple (I used Gala) cored and diced bite-sized
- ⅓ cup pecans crushed
- ⅓ cup golden or mixed raisins
Citrus Honey Dressing
- 3 tbsp apple cider vinegar
- 2 tbsp honey sub maple syrup for vegan
- 1 tbsp lemon juice 1 tsp lemon zest
- 1 tbsp orange juice 1 tsp orange zest
- 1 tsp lime juice ½ tsp lime zest
- 2 tsp dijon mustard
- ½ tsp salt
- ¼ tsp pepper
- ½ cup avocado oil or olive oil
Instructions
- Add baby kale and spinach mix to a large bowl. Grate/shred the cabbage and carrots. Add them on top of the lettuce. Add apples, pecans, and raisins.
- For a citrus honey dressing, add all dressing ingredients to a mason jar. Shake and serve over salad.
