Ingredients

baby kale or kale/spinach mix

cup
red cabbage
shredded
1
cup
carrots
shredded
1
red apple (I used Gala)
cored and diced bite-sized
⅓
cup
pecans
crushed
⅓
cup
golden or mixed raisins
Citrus Honey Dressing

tbsp
apple cider vinegar

tbsp
honey
sub maple syrup for vegan
1
tbsp
lemon juice
1 tsp lemon zest
1
tbsp
orange juice
1 tsp orange zest
1
tsp
lime juice
½ tsp lime zest

tsp
dijon mustard

tsp
salt

pepper

avocado oil
or olive oil
Instructions
Add baby kale and spinach mix to a large bowl.
Grate/shred the cabbage and carrots. Add them on top of the lettuce.
Add apples, pecans, and raisins.
For a citrus honey dressing, add all dressing ingredients to a mason jar. Shake and serve over salad.
