Chocolate Covered Cashews make an easy and satisfying snack! Simply made with your favorite melted chocolate, cashews, and optional add-ins.

Chocolate-covered cashews can be made with either dark or semi-sweet chocolate. They are simply made with just melted chocolate and cashews. I love to top them with flaky salt! These make the perfect satisfying snack, holiday gift, or wonderful addition to a holiday treat tray.

I recommend using good quality chocolate like this Ghiradelli. Either chocolate chips or a chopped bar of chocolate can be used.

  1. Add chocolate to a microwave-safe bowl. Melt chocolate in 30-second increments stirring and reheating until melted, smooth, and shiny (I used the melting function on my microwave).
  2. Stir in cashews and add-ins if using.
  3. Spoon heaping spoonfuls of the cashew mixture onto the prepared cookie sheets. Sprinkle each cluster with flaky salt.
  4. Chill in the refrigerator or freezer until set.

Chocolate Covered Cashews with Sea Salt

I highly recommend topping the clusters with flaky sea salt for flavor and a pretty appearance!

Tips/Variations for Chocolate Cashew Clusters

Chocolate Cashew Variations

When I tested the recipe, I added pumpkin seeds, shredded coconut, and dried cranberries. Absolutely delicious and highly recommended!

  • Add dried fruit, freeze-dried fruit, or other nuts/seeds
  • Use milk chocolate or white chocolate. Almond bark can also be used.
  • Use a different type of nut, I recommend almonds or pistachios would be really good too.
  • Top with sprinkles for a festive holiday treat.
  • Sweeten up bitter chocolate by adding 1-2 tablespoons of maple syrup, honey, or sugar to the melted chocolate.

Vegan Chocolate Covered Cashews

Chocolate cashew clusters can easily be made vegan by using vegan chocolate.

How to Store Chocolate Cashews

Store in an airtight container in the refrigerator for up to 2 weeks (recommended).

They will keep at room temperature for 1 week. Or in the freezer for up to 3 months.

For best results, serve slightly chilled or at room temperature.
