Baja Bowl Panera Recipe

Baja Bowl is a Panera Bread Copycat that you can quickly and easily make at home. With cilantro-lime whole grains, black bean and corn salsa, avocado, tomatoes, sour cream, crumbled cheese, and salsa verde.

I love this Baja grain bowl. Confession, I have been really into grain bowls lately. This one is a copycat of the Panera Bread Baja grain bowl. It is so simple and quick to make at home. It took just 15 minutes to come together! Just cook your grains and add a squeeze of lime and some cilantro. Make a quick black bean and corn salsa. Then add all the delicious toppings. Great for meal prep as well. You can absolutely add some meat if desired. It would be delicious with grilled chicken, steak, shrimp, shredded pork, or beef.

How to Make a Copycat Panera Bread Baja Bowl

  1. Make the whole grains. Cook/heat the whole grains according to package directions. Add whole grains to a bowl. Squeeze a lime wedge over grains and sprinkle with chopped cilantro. Stir to combine.
  2. Make the black bean and corn salsa. In a small bowl, combine black beans, corn, and chili lime seasoning. Mix to combine. Sprinkle corn and bean mixture over the grains.
  3. Add toppings. Add tomatoes, avocado, cheese, sour cream, and salsa verde.

Easy Baja Bowl Storage

Store leftovers in an airtight container in the refrigerator for 3-4 days.

Tips/Substitutions

  • Add meat like chicken, steak, shrimp, or shredded meat. When I ate leftovers, I added some pulled pork to the bowl and it was delicious.
  • Customize the bowl to add your favorite toppings.

How do you Meal Prep a Grain Bowl?

These Baja bowls are awesome for meal prepping. Just prep the desired amount of grains, and add black bean and corn salsa, tomatoes, cheese, and sour cream. If possible, wait to cut the avocado to prevent browning and the salsa verde could be packed separately if desired. Or put it all together in the morning for an easy lunch.

Ingredients

  • 1 cup whole grains brown rice, quinoa, barley, etc.
  • 1-2 tsp cilantro chopped, packed- plus extra for serving
  • 1 lime wedge plus extra for serving

Black bean and corn salsa

  • ¼ cup black beans
  • ¼ cup corn
  • ¼ tsp chili lime seasoning see notes

Baja Bowl Toppings

  • 6 grape tomatoes halved
  • ½ ripe avocado sliced
  • 2 tbsp cotija cheese or feta cheese
  • 2 tbsp sour cream or plain Greek yogurt
  • 2-3 tbsp salsa verde or to taste

Instructions

  • Cook/heat the whole grains according to package directions.
    Add whole grains to a bowl. Squeeze grains with a lime wedge and sprinkle with chopped cilantro. Stir to combine.
  • In a small bowl, combine black beans, corn, and chili lime seasoning. Mix to combine. Sprinkle corn and bean mixture over the grains.
    Add tomatoes, avocado, cheese, sour cream, and salsa. Garnish with a squeeze of lime and some fresh cilantro.
    Serve immediately or cover and refrigerate until ready to serve.
  • Store in an airtight container in the refrigerator for 3-4 days.

Notes

Chili lime seasoning- like Trader Joe’s or Tajin
Option to add grilled chicken. I like to simply sprinkle my chicken with garlic, salt, and pepper before grilling. It would also be great with shrimp, steak, or pulled pork.
