Instructions
Cook/heat the whole grains according to package directions.Add whole grains to a bowl. Squeeze grains with a lime wedge and sprinkle with chopped cilantro. Stir to combine.
In a small bowl, combine black beans, corn, and chili lime seasoning. Mix to combine. Sprinkle corn and bean mixture over the grains. Add tomatoes, avocado, cheese, sour cream, and salsa. Garnish with a squeeze of lime and some fresh cilantro. Serve immediately or cover and refrigerate until ready to serve.
Store in an airtight container in the refrigerator for 3-4 days.
