Baja Bowl Panera

Made with cilantro-lime whole grains, black bean and corn salsa, avocado, tomatoes, sour cream, crumbled cheese, and salsa verde.

Equipment

Ingredients

  • 1 cup whole grains brown rice, quinoa, barley, etc.
  • 1-2 tsp cilantro chopped, packed- plus extra for serving
  • 1 lime wedge plus extra for serving

Black bean and corn salsa

  • ¼ cup black beans
  • ¼ cup corn
  • ¼ tsp chili lime seasoning see notes

Baja Bowl Toppings

  • 6 grape tomatoes halved
  • ½ ripe avocado sliced
  • 2 tbsp cotija cheese or feta cheese
  • 2 tbsp sour cream or plain Greek yogurt
  • 2-3 tbsp salsa verde or to taste

Instructions

  • Cook/heat the whole grains according to package directions.
    Add whole grains to a bowl. Squeeze grains with a lime wedge and sprinkle with chopped cilantro. Stir to combine.
  • In a small bowl, combine black beans, corn, and chili lime seasoning. Mix to combine. Sprinkle corn and bean mixture over the grains.
    Add tomatoes, avocado, cheese, sour cream, and salsa. Garnish with a squeeze of lime and some fresh cilantro.
    Serve immediately or cover and refrigerate until ready to serve.
  • Store in an airtight container in the refrigerator for 3-4 days.

Notes

Chili lime seasoning- like Trader Joe's or Tajin
Option to add grilled chicken. I like to simply sprinkle my chicken with garlic, salt, and pepper before grilling. It would also be great with shrimp, steak, or pulled pork.
