It took just 15 minutes to come together! Just cook your grains and add a squeeze of lime and some cilantro. Make a quick black bean and corn salsa. Then add all the delicious toppings. Great for meal prep as well. You can absolutely add some meat if desired. It would be delicious with grilled chicken, steak, shrimp, shredded pork, or beef.

How do you Meal Prep a Grain Bowl?
These Baja bowls are awesome for meal prepping. Just prep the desired amount of grains, and add black bean and corn salsa, tomatoes, cheese, and sour cream. If possible, wait to cut the avocado to prevent browning and the salsa verde could be packed separately if desired. Or put it all together in the morning for an easy lunch.
