Rhubarb Simple Syrup

An easy recipe made with fresh garden rhubarb that is perfect for cocktails, drinks, and more!

Equipment

  • small sauce pan
  • small strainer

Ingredients

  • ¾ cup water
  • ¾ cup sugar
  • ¾ cup (approx. 2 medium stalks) rhubarb leaves removed, chopped

Instructions

  • Heat a small saucepan on medium heat and add water and sugar. Stir to dissolve the sugar. Once the mixture comes to a boil, add chopped rhubarb. Cook for 10 minutes.
    Reduce heat to simmer for 10 more minutes.
  • Strain out the rhubarb using a strainer.
    Let cool before using or storing.
  • Store in an airtight container in the refrigerator for up to one month.

Notes

Can be made with frozen rhubarb.
Try to choose red stalks so the syrup ends up super pink. 
Makes approximately 12 tablespoons.
Use the sweet rhubarb chunks as a spread!
The recipe can easily be increased- use equal amounts of water, sugar, and chopped rhubarb to make the desired amount of syrup.
