Line a cookie sheet with parchment paper.Peel and slice bananas into 1-1½ inch slices. Add chocolate chips and peanut butter into a medium bowl. Microwave on melt mode or 30-second increments until melted and smooth.
Dip each banana slice in the chocolate using a fork to help flip the bananas and coat them completely in the chocolate (I worked with 4 at a time). Let excess chocolate drip off the banana and transfer to the prepared cookie sheet. Sprinkle the tops with sea salt or sprinkles if desired. Repeat until all bananas are coated in the chocolate. (Remelt chocolate as needed to make the chocolate smooth again).Freeze until hardened.
Once frozen, transfer the banana bites to a ziploc bag or airtight container. Store in the freezer for up to 3 months.
