Ingredients

Rhubarb Simple Syrup

  • ¾ cup water
  • ¾ cup sugar
  • ¾ cup rhubarb- fresh or frozen leaves removed, chopped

Rhubarb Gin Cocktail

  • 1-1½ shots gin
  • 2 tbsp rhubarb simple syrup or to taste
  • cup club soda
  • ice
  • garnish with rhubarb peel optional

Instructions

Rhubarb Simple Syrup

  • Start by making the rhubarb simple syrup. Heat a small saucepan on medium heat and add water and sugar. Stir to dissolve the sugar. Once the mixture comes to a boil, add chopped rhubarb. Cook for 10 minutes.
    Reduce heat to simmer for 10 more minutes.
  • Strain out the rhubarb using a strainer.
    Let cool before using or storing.

Rhubarb Gin Cocktail

  • Fill a low ball glass ½-¾ full with ice. Add gin, rhubarb simple syrup, and top with club soda. Stir and adjust to taste.
    Garnish- If desired, use a vegetable peeler to peel rhubarb stalk. Wrap the rhubarb into a coil then stick a cocktail pick through the middle.
    Serve.
  • Store extra rhubarb syrup in an airtight container in the refrigerator for up to one month.
