Equipment

  • small saucepan
  • vegetable grater

Ingredients

  • ¾ cup water
  • ¾ cup cane sugar
  • ½ cup brown sugar
  • 1 tbsp vanilla extract
  • 2 sticks cinnamon sticks

Instructions

  • Add water, cane sugar, and brown sugar to a saucepan, stir. Bring the mixture to a boil.
Meanwhile, grate the edges of the cinnamon sticks with the fine side of a vegetable grater (optional but helps to bring out the flavor of the cinnamon). I grated about half of a ⅛ tsp.
Once the mixture boils, reduce heat to low. Stir in vanilla, cinnamon sticks, and grated cinnamon. Simmer for approximately 12-15 minutes or until the mixture starts to thicken.
Turn off the heat to allow the mixture to cool and thicken for 20-30 minutes. Remove cinnamon sticks.
  • Use or store in an airtight container at room temperature.

Notes

The recipe makes approximately 1⅓ cups of syrup. Adding approximately 1 tablespoon of syrup to your drink, you will get approx. 20 servings out of it.
