Sheet Pan Sausage and Veggies is an easy and healthy weeknight meal. With buffalo chicken sausage, peppers, and zucchini.

Sheet Pan Sausage and Veggies

I love the simplicity and ease of sheet pan meals. One sheet pan sausage and veggies is such an easy meal that comes together in about 40 minutes. With flavorful chicken sausage, zucchini, and colorful peppers. With flavorful seasoning and melted parmesan. It comes together quickly and easily for a simple and delicious weeknight meal!

Ingredients in Sheet Pan Sausage and Veggies

  1. Chicken Sausage- Buffalo chicken sausage was used for this recipe but any flavor of chicken sausage will do. 4 sausages are used.
  2. Peppers- One yellow and one orange bell pepper are used but you can use any color.
  3. Zucchini- One zucchini is used, no need to peel it first.
  4. Seasoning- To season the vegetables you will need ¼ teaspoon each of salt, pepper, garlic powder, and parsley.
  5. Oil- I like to use either olive oil or avocado oil for sheet pan meals with sausage.

How to Make Sheet Pan Sausage and Veggies

  1. Chop all of the vegetables into bite-sized pieces. Place them on the sheet pan.
  2. Drizzle oil over the vegetables then sprinkle with salt, pepper, garlic powder, and parsley. Toss to coat the seasoning on all of the vegetables.
  3. Cut sausage into rounds then add to the pan. Spread everything in a single layer on the sheet pan.
  4. Bake for 20 minutes flip and sprinkle with parmesan cheese. Continue baking for 10-15 minutes or until the sausage is cooked, the vegetables are tender, and the cheese is melted.
  5. Sprinkle with fresh herbs. Serve.

Yes, this recipe is totally customizable so add in your favorite veggies. I recommend the ones listed above.

What Type of Sausage Should I use?

The seasoning used is very versatile so any kind/flavor of chicken sausage with work for this recipe! I used buffalo chicken sausage but you can use chicken and apple, Italian style, or any other kind.

Storage

Store leftover sausage and vegetables in an airtight container in the refrigerator for up to 4 days.

Ingredients

  • 1 medium yellow bell pepper
  • 1 medium orange bell pepper
  • 1 medium zucchini
  • 1½ tbsp avocado or olive oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ tsp garlic powder
  • ¼ tsp dried parsley
  • 4 links chicken sausage I use buffalo chicken sausage
  • ¼ cup grated parmesan cheese
  • fresh parsley or cilantro chopped, for garnish

Instructions

  • Preheat the oven to 400℉.
  • Chop all of the vegetables into bite-sized pieces. Place them on the sheet pan.
  • Drizzle oil over the vegetables then sprinkle with salt, pepper, garlic powder, and parsley. Toss to coat the seasoning on all of the vegetables.
  • Cut sausage into rounds then add to the pan. Spread everything in a single layer on the sheet pan.
  • Bake for 20 minutes flip and sprinkle with parmesan cheese. Continue baking for 10-15 minutes or until the sausage is cooked, the vegetables are tender, and the cheese is melted.
    Sprinkle with fresh herbs. Serve.
