Pumpkin Pancakes With Pancake Mix

It is officially the fall season and I am ready for all things pumpkin! Pumpkin pancakes are the perfect fall weekend breakfast or brunch. Made with your favorite pancake mix I love Krusteaz! If you are looking for a gluten-free pancake mix, Krusteaz is the best. Their gluten-free buttermilk pancake mix tastes just like the regular. I tested this recipe using both the regular Krusteaz buttermilk mix and the gluten-free one. They are both delicious!

This pumpkin pancakes recipe with pancake mix is super simple. Just combine the pancake mix with pumpkin puree, pumpkin pie spice, cinnamon, milk, and an egg. And you have fall-flavored fluffy pancakes in minutes!

How to Make Pumpkin Pancakes With Pancake Mix

Batter for Pumpkin Pancakes With Pancake Mix
  1. In a medium mixing bowl, mix pancake mix, pumpkin puree, and cinnamon. Add in milk, egg, and pumpkin puree. Stir to combine but don’t over-mix.
  2. Once the griddle is hot, butter or oil the griddle. Pour the pancake mix onto the griddle using a ¼ cup scoop (or ⅓ for larger pancakes).
  3. Cook the pancakes until you see small bubbles form and start to pop near the edges of the pancakes. Flip the pancakes and continue cooking until browned on each side.
  4. Keep warm in the oven until ready to serve or serve immediately. Top with butter and maple syrup if desired.

Best Pumpkin Pancakes From Mix Tips

  • Don’t overmix the batter (it’s ok if there are some lumps).
  • You can tell the pancakes are ready to flip when the bubbles around the edges of the pancakes start popping.
  • Use a measuring cup (I used ¼ cup) to scoop out the batter into even portions.
  • Use pumpkin puree, not fresh pumpkin or pumpkin pie mix.
  • Use any brand of pancake mix but look for “just add water” varieties.

Recipe Variations for Pumpkin Pancakes With Pancake Mix

  • Add crushed pecans or other nuts.
  • For sweeter pancakes, add 2 tablespoons of brown sugar to the batter.

Can I Freeze Pancakes?

You can freeze pancakes for up to 3 months. Place cooled leftover pancakes on a cookie sheet and freeze. Transfer to a Ziploc bag or airtight container. This keeps pancakes from sticking together. Alternatively, place parchment paper between pancakes to keep them from sticking.

Storage

Store leftover pancakes in an airtight container in the refrigerator for up to 4 days.

Reheat pancakes in the microwave, toaster, toaster oven, skillet, or oven until warm.

Ingredients

  • 2 cups Pancake mix such as Krusteaz or Krusteaz gluten-free or other "just add water pancake mix"
  • 1 tsp pumpkin pie spice See notes
  • ½ tsp cinnamon
  • 1â…“ cup milk
  • 1 egg
  • ½ cup pumpkin puree
  • butter and maple syrup for topping

Instructions

  • Heat the griddle to 375°F.
  • In a medium mixing bowl, mix pancake mix, pumpkin puree, and cinnamon.
    Add in the milk, egg, and pumpkin puree. Stir to combine but don't over mix.
  • Once the griddle is hot, butter or oil the griddle. Pour the pancake mix onto the griddle using a ¼ cup scoop (or â…“ for larger pancakes).
  • Cook the pancakes until you see small bubbles form and start to pop near the edges of the pancakes. Flip the pancakes and continue cooking until browned on each side.
  • Keep warm in the oven until ready to serve or serve immediately.

Notes

If you don’t have pumpkin pie spice, use a combination of cinnamon, nutmeg, cloves, and ginger. 
For sweeter pancakes, add 2 tablespoons of brown sugar to the batter.

    Kids love them. Will definitely be making again. Thank you so much for the recipe! The only change I made was adding a teaspoon of vanilla. But that’s just personal preference. Great recipe!

    Very good! I substituted 1/3 cup milk with orange juice and added T of grated orange rind. Took them to a whole other level!
