Pomegranate Prosecco Cocktail made with prosecco, mint simple syrup, and pomegranate juice. A delicious and festive holiday cocktail!

Pomegranate Mint Prosecco Cocktail

The inspiration for this drink; I wanted a festive holiday drink for a friend’s get-together back in December. Some of my friends like sweet drinks while others don’t. This Prosecco-based cocktail is perfect because it is refreshing and not too sweet. However, you can also adjust the sweetness level to your personal taste.

Right before our friends get together, our friend informed us that he was going to be proposing to his girlfriend soon. His plan was to propose to her in downtown Denver with all the holiday lights and festivities going on. After the proposal, friends and family were all going to meet them to celebrate at Union Station. So we knew the plan before the friends get together, but had to keep it a secret. Luckily, none of us spilled the beans!

Pomegranates

Pomegranates are considered a superfood because their seeds have powerful antioxidant properties. A source of fiber, vitamins, B, C, E, and K, magnesium, and potassium.

For this recipe, I used Pom Wonderful brand 100 percent pomegranate juice. It can be found in the refrigerator section at the grocery store near the produce.

Using pomegranate seeds for this recipe is optional. Pomegranates are in season September through December. You can buy whole pomegranates when in season. Or buy ready-to-eat pomegranate seeds like POM Wonderful year around. Pomegranate juice and seeds are the perfect addition to this Processo cocktail!

How to Make a Pomegranate Prosecco Cocktail

Mint Simple Syrup

Begin by making the mint simple syrup.

  • Heat. In a small saucepan on medium heat, combine water and sugar. Stir, bring to a boil and dissolve the sugar.
  • Add mint. After the sugar is dissolved, reduce heat to low then add the mint.
  • Simmer for approximately 8 minutes.
  • Cool. Turn off heat and allow the mint to steep and the mixture to cool.
  • Strain out the mint leaves.

Sugar Rimmed Glass

A sugar-rimmed glass is optional, but adds a fun festive feel to the drink!

  1. Pour a small amount of pomegranate juice onto a small plate. Dip the rim of the glass in the pomegranate juice. You could also use lemon juice.
  2. Pour colored sugar onto a small plate. Dip the glass in the sugar. You can use any sugar color red, green, white, silver, gold, etc. You can make your own colored sugar by mixing sugar and food coloring.
  3. Repeat until 4 glasses are rimmed with sugar.

Assemble the Drink

After making the mint simple syrup and prepping the sugar-rimmed glasses you’re ready to assemble.

  1. Pour 6-6½ ounces of prosecco into the prepared glass.
  2. Add in 2 tbsp mint syrup followed by 2-3 tbsp of pomegranate juice. Adjust to taste.
  3. Garnish with pomegranate seeds and fresh mint, if desired.

Can it be Made a Mocktail?

This drink can easily be made alcohol-free. Just replace the prosecco with club soda and you have a tasty mocktail!

Equipment

  • small saucepan

Ingredients

Mint Simple Syrup

  • 1 cup white sugar
  • 1 cup water
  • 4 fresh mint sprigs taken off the stem, chopped

For the Drink: by the glass

  • 6-6½ ounces prosecco chilled
  • 2 tbsp mint simple syrup
  • 2-3 tbsp pomegranate juice

Garnish

  • red sanding sugar
  • pomegranate seeds
  • fresh mint leaves

Instructions

Mint Simple Syrup

  • In a small saucepan, bring water and sugar to a boil over medium heat. Stir to dissolve the sugar.
    Once the sugar is dissolved, reduce heat to low, add the mint and simmer approximately 8 minutes.
  • Turn off the heat and let the syrup steep and cool.
    Strain out the mint leaves before serving.
  • Store leftovers in an airtight container in the refrigerator for up to 3 weeks.

Assemble the drink

  • For sugar rim, dip glass rims into pomegranate juice then coat in red sanding sugar.
  • Pour 6-6½ ounces of prosecco into the prepared glass.
    Add mint syrup and pomegranate juice.
    Garnish with pomegranate seeds and fresh mint, if desired.
    Serve immediently.
  • Store syrup in an airtight container for up to one month.

Notes

Make it a mocktail by replacing the Prosecco with club soda.
