Copycat Panera Mediterranean Grain Bowl makes a healthy, filling, and satisfying meal. Made with whole grains, grilled chicken, vegetables, feta cheese, hummus, and topped with tzatziki sauce. Perfect for lunch, dinner, or meal prep!
This Copycat Panera Bread Mediterranean Warm Grain Bowl is both healthy and delicious! With whole grains, leafy greens, vegetables, grilled chicken, hummus, feta cheese, and tzatziki sauce. It is satisfying and filling. Delicious hot or cold and can be served for either lunch or dinner. It keeps really well which makes it perfect for meal prep! This recipe is super easy to make if you use frozen or the pouch rice and quinoa mixtures. I used a frozen variety called rice medley I get from Trader Joe’s. The chicken in the recipe is optional but I like the added protein. You can marinate it however you like, I like to sprinkle on my homemade lemon pepper seasoning before grilling.
I made a few changes to the recipe. Panera Bread makes this bowl with plain greek yogurt and tahini dressing. I opted for tzatziki sauce instead. It goes perfectly with all the Mediterranean ingredients!

How to Make Panera Mediterranean Grain Bowl with Chicken
- Marinate the chicken a few hours prior to making.
- Cook the chicken breasts on the grill or saute in a pan until cooked through and the internal temperature is 165 degrees F. Slice the chicken breasts.
- Cook/heat up the whole grains according to package directions.
- Divide all the ingredients between two bowls. Add whole grains, arugula, cucumbers, tomatoes, olives, feta cheese, chicken, hummus, and tzatziki sauce.
Tips/Substitutions
- Use any kind of whole grains- brown or red rice, quinoa, barley, etc.
- Add fresh lime juice and chopped cilantro to the grains (how Panera Bread does it).
- Substitute tzatziki sauce for plain Greek Yogurt (this is how it is at Panera Bread) I just prefer it with the tzatziki sauce
- Add tahini dressing. This is how Panera Bread has it but I love the tzatziki sauce instead.
- Make homemade hummus (so much better)! I love Gimme Some Oven’s Hummus Recipe.

Ingredients
- 2 chicken breasts
- 2 cups cooked whole grains example- brown rice, quinoa, barley, etc.
- 1 cup arugula packed
- ½ cup cucumbers diced
- ½ cup cherry tomatoes halved
- 10 olives kalamata olives
- 3-4 tbsp crumbled feta cheese
- 4 tbsp hummus
- ⅓ cup tzatziki sauce (homemade or store bought) See Recipe Notes
Instructions
- Marinate the chicken breast as desired a few hours in advance. (I used 2 tbsp avocado oil, 2 tbsp lemon juice, and sprinkled with lemon pepper seasoning). Either grill the chicken breast or saute them in a pan until completely cooked through to 165°F.Cool slightly and slice.
- Cook the whole grains.Divide all the ingredients between two bowls. To each bowl, add whole grain, arugula, cucumbers, tomatoes, olives, chicken, feta, hummus, and tzatziki sauce.
- Serve immediately or store until ready to serve.
- Store in an airtight container in the refrigerator for 4-5 days.
