Ocean Spray Cranberry Bread

Ocean Spray Cranberry Bread is a moist and flavorful quick bread that is wonderful for winter baking! With fresh orange juice, tart cranberries, then topped with orange glaze.

After the holidays, I always end up with extra fresh cranberries. Instead of wasting them, I freeze for later use. I never knew what to do with them… until now! This Ocean Spray cranberry bread recipe is moist, not too sweet, with fresh tart cranberries, orange juice, and zest. With a delicious orange glaze on top.

Other uses for extra cranberries include; a garnish for a Cranberry Moscow Mule or cranberry simple syrup and a garnish for a Cranberry Vodka Spritzer.

How to Make Ocean Spray Cranberry Bread

  1. Mix dry ingredients. In a medium bowl, mix flour, baking powder, and salt. Set aside.
  2. Mix wet ingredients. To a large bowl, add oil, sugar, sour cream, eggs, orange juice and zest, and vanilla extract. Whisk until no lumps are present.
  3. Stir in dry ingredients until just combined, don’t over mix. Fold in fresh cranberries. Spread batter into the loaf pan.
  4. Bake for 52-55 minutes or until a toothpick comes out clean when poked in the middle. Cool completely before glazing.
  5. Glaze the bread. Mix powdered sugar, orange juice, and zest. Add more juice until the desired consistency is reached. Pour over the top of the bread using a spatula to spread the glaze if needed. Let the glaze harden then slice and serve.

Tips/Variations

  • Add nuts or white chocolate chips
  • Chop cranberries in half
  • Let bread cool completely before glazing

FAQs

Can I Make Cranberry Orange Bread Ahead of Time?

The bread can be made up to three days ahead and stored in an airtight container. Alternatively, you can store it in an airtight container in the refrigerator for up to a week.

Can I use Frozen Cranberries?

Yes, frozen cranberries also work great for this recipe.

Can I use Dried Cranberries?

Yes, you can use dried cranberries such as Ocean Spray Craisins. I would use 2/3-3/4 cups of dried cranberries. Soak them in warm water for 10 minutes then drain.

Can I add Nuts?

You can add 1/2 cup of chopped nuts such as walnuts or pecans. Fold them into the batter with the cranberries.

What is the Best Substitute for Sour Cream in Baking?

Adding sour cream to baked goods adds moistness and richness which results in tender baked goods. The best swap for sour cream is plain greek yogurt.

Storage

Store in an airtight container for 4-5 days. To freeze, cool the loaf completely and place it in a freezer-safe bag. Freeze for up to 3 months.

Ingredients

  • 2 cups all-purpose flour
  • 1½ tsp baking powder
  • ½ tsp salt
  • ½ cup avocado oil or other vegetable oil
  • ½ cup cane sugar see notes
  • ½ cup sour cream or plain Greek yogurt
  • 2 eggs
  • ¼ cup fresh orange juice cara cara or navel orange
  • 1 tsp orange zest
  • 1 tsp vanilla extract
  • 1 cup fresh Ocean Spray cranberries or frozen

Orange Glaze

  • ¾ cup powdered sugar
  • 1 tbsp fresh orange juice
  • orange zest optional

Instructions

  • Preheat oven to 350°F.
    Spray the loaf pan with nonstick cooking spray.
  • In a medium bowl, mix flour, baking powder, and salt. Set aside.
  • To a large bowl, add oil, sugar, sour cream, eggs, orange juice and zest, and vanilla extract. Whisk until smooth and no lumps are present.
    Stir in dry ingredients until just combined, don't over mix.
    Fold in fresh cranberries.
    Spread batter into the loaf pan.
  • Bake for 52-55 minutes or until a toothpick comes out clean when poked in the middle. Cool completely before glazing.
  • To glaze, mix powdered sugar, orange juice, and zest. Add more juice if needed until the desired consistency is reached. Pour over the top of the bread using a spatula to smooth out the glaze if needed. Let harden.
    Slice and serve.
  • Store leftovers in an airtight container for 4-5 days.

Notes

Makes one loaf. 
Add ¼ cup more sugar for a sweeter bread.
