Keto Meatballs make the perfect main dish or appetizer. Flavorful meatballs stuffed with melty mozzarella cheese and then topped with marinara sauce are ready in just 30 minutes!

Keto Meatballs

Mozzarella stuffed meatballs are so flavorful and make a great main dish or appetizer. They are so easy to make and are ready in just 30 minutes! The meat is mixed with flavorful herbs and spices. Dried parmesan cheese is used instead of breadcrumbs making them both keto and gluten-free! Additionally, the meatballs are stuffed with a cube of mozzarella cheese. Is there anything better than melty cheese? Bake until browned then top with marinara sauce, parmesan cheese, and fresh parsley. These keto meatballs are just so easy and so good!

Keto Meatball Ingredients

  • Ground Beef- 1½ pounds of ground beef, use lean beef for the best results.
  • Parmesan- ⅓ cup of grated parmesan is used to replace the breadcrumbs.
  • Egg- One egg binds the meatballs together.
  • Mozzarella cheese- You will need about 3 ounces of mozzarella cheese. I used a block of cheese and cut it into ½ inch cubes.
  • Marinara sauce- Use 2 cups of your favorite marinara sauce here are some low-carb spaghetti sauce options.
  • Seasonings- 1 tsp salt, ½ tsp black pepper, ½ teaspoon garlic powder, and ½ tsp Italian seasoning are used to season and flavor the meatballs.

How to Make Mozzarella-Stuffed Meatballs

  1. In a medium bowl, combine beef, parmesan cheese, egg, salt, pepper, garlic powder, and Italian seasoning. Make sure the mixture is well combined (I used my hands to massage and mix the meat).
  2. Scoop approximately 2 tablespoons of the meat then roll it into a ball. Press a cube of meat into the center of the ball. Make sure to surround the cheese with meat and re-roll it into a ball. Place the meatball onto the prepared baking sheet.
  3. Lightly spray the meatballs with cooking spray. Place in the oven and bake for 14-17 minutes or until browned and cooked through.
  4. Pour warm marinara sauce over the meatballs then sprinkle with parmesan cheese and fresh chopped parsley. Serve.

Are Meatballs Keto?

Meatballs are generally made with breadcrumbs making them not Keto-friendly. However, there are no breadcrumbs in these keto meatballs. We replace breadcrumbs with dried parmesan cheese making them keto-friendly!

What do you put in Meatballs so They Don’t Fall Apart?

We use one egg to help bind and hold the meatballs together as well as grated parmesan cheese also helps to soak up moisture so the meatballs hold together.

Storing Leftover Meatballs

Store leftover meatballs in an airtight container in the refrigerator for up to 1 week.

Freeze in a freezer-safe Ziploc bag for up to 3 months.

Ingredients

  • 1½ pounds ground beef 85-90% lean
  • â…“ cup grated parmesan cheese
  • 1 large egg
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp Italian seasoning
  • 3 ounces mozzarella cheese cut into ½ inch cubes
  • 2 cups low-carb marinara sauce warmed
  • grated parmesan and fresh parsley garnish

Instructions

  • Preheat the oven to 425°F. Line a baking sheet with foil then spray it with nonstick cooking spray.
  • In a medium bowl, mix together beef, parmesan cheese, egg, salt, pepper, garlic powder, and Italian seasoning. Use your hands to mix well if needed.
  • Scoop approximately 2 tablespoons of the meat then roll it into a ball. Press a cube of cheese into the center of the ball. Surround the cheese with meat and reroll it into a ball. Place the meatballs onto the prepared baking sheet.
  • Lightly spray the meatballs with cooking spray. Place in the oven for 14-17 minutes until browned and cooked through.
  • Pour warm marinara sauce over the meatballs then sprinkle with parmesan cheese and fresh parsley. Serve.
  • Store leftover meatballs in an airtight container in the refrigerator for up to 1 week.

Notes

The recipe makes approximately 20 meatballs.
