Broccoli Cheese Egg Bake

Start your day off right with a delicious Broccoli Cheese Egg Bake. Creamy eggs, melted white cheddar cheese, broccoli, and a kick of Cajun seasoning.

Cajun Seasoning

My husband’s family is from Louisiana. Since meeting him and his family I have loved Cajun seasoning! Cajun seasoning is a seasoning usually consisting of salt, pepper, garlic and some have varied herbs and spices. I love the flavor and kick it brings this broccoli bake.

My favorite seasoning is “Slap Ya Mama.” It’s a simple seasoning with only salt, garlic, pepper, and red pepper, but adds a ton of flavor. The red container is hot, the white container is made with white pepper, and the yellow is the regular seasoning. Slap Ya Mama is available online at Amazon, Target, World Market, and Walmart. For this recipe, you can use any brand of Cajun seasoning.

Health Benefits of Broccoli

Broccoli is in the same family as cauliflower, cabbage, and kale and can be eaten either cooked or raw. Broccoli gets its name from the Italian word “broccolo” which means cabbage sprout. It is a good source of fiber and protein and contains iron, potassium, calcium, selenium, and magnesium. It also provides vitamins A, C, E, K and has an array of B vitamins including folic acid. Broccoli is the perfect way to start your day and get many of the vitamins and minerals you need.

Steam the Broccoli

  • Place broccoli and 1-2″ of water in a medium saucepan. Use a steamer basket if desired. Bring water to a boil, cover, and cook for about 10 minutes to tender-crisp. The broccoli will start to get tender and will be bright green. It will be slightly tender and soft but will finish cooking in the oven. Frozen broccoli may be used.
  • Drain the broccoli. It’s important that you drain the broccoli’s excess water. If you don’t drain the excess water the middle of the dish stays watery. You can squeeze the broccoli or pat it with a paper towel to help remove water.

How to Make Broccoli Cheese Egg Bake

  1. Pour steamed broccoli into the bottom of the prepared baking dish.
  2. Sprinkle shredded cheese on top of broccoli. I love the sharp white cheddar in this dish.
  3. Whisk together eggs, milk, and cajun seasoning in a medium bowl.
  4. Pour egg mixture over the broccoli and cheese.
  5. Bake until the eggs are completely set and cooked through 30-40 minutes.

Equipment

  • medium saucepan with a lid
  • medium mixing bowl
  • baking dish

Ingredients

  • 1 head broccoli cut off stem then chopped into smaller pieces
  • 8 large eggs
  • 1 cup milk
  • 1 tsp Cajun seasoning
  • 1 ½ cups sharp white cheddar cheese grated

Instructions

  • Preheat oven 350°F.
  • Spray baking dish with nonstick spray.
  • Cut broccoli off the stem then cut florets into bite-sized pieces.
  • In a medium saucepan, add broccoli florets then add 1-2" of water.
    Bring water to boil, cover, and cook until bright green and softened slightly (about 10 minutes total).
    Drain broccoli well to remove all excess water.
  • Spread broccoli evenly over the bottom of the prepared baking dish.
    Sprinkle cheese on top of the broccoli.
  • In a medium mixing bowl whisk together eggs, milk, and Cajun seasoning.
  • Pour egg mixture over broccoli and cheese making sure to evenly coat.
  • Bake 30-40 minutes until cooked through and the center is set. Slice and serve.
  • Store leftovers in an airtight container in the refrigerator for 3-4 days.

Notes

Frozen, steam in the bag broccoli can be used. Remove excess water after microwaving.
