This pumpkin pancakes recipe with pancake mix is super simple. Just combine the pancake mix with pumpkin puree, pumpkin pie spice, cinnamon, milk, and an egg. And you have fall-flavored fluffy pancakes in minutes!

How to Make Pumpkin Pancakes With Pancake Mix
- In a medium mixing bowl, mix pancake mix, pumpkin puree, and cinnamon. Add in milk, egg, and pumpkin puree. Stir to combine but don’t over-mix.
- Once the griddle is hot, butter or oil the griddle. Pour the pancake mix onto the griddle using a ¼ cup scoop (or ⅓ for larger pancakes).
- Cook the pancakes until you see small bubbles form and start to pop near the edges of the pancakes. Flip the pancakes and continue cooking until browned on each side.
- Keep warm in the oven until ready to serve or serve immediately. Top with butter and maple syrup if desired.
Best Pumpkin Pancakes From Mix Tips
- Don’t overmix the batter (it’s ok if there are some lumps).
- You can tell the pancakes are ready to flip when the bubbles around the edges of the pancakes start popping.
- Use a measuring cup (I used ¼ cup) to scoop out the batter into even portions.
- Use pumpkin puree, not fresh pumpkin or pumpkin pie mix.
- Use any brand of pancake mix but look for “just add water” varieties.
