A frittata with turkey sausage that is bursting with taco seasoned flavor, colorful sweet mini peppers, creamy eggs, and melty cheese. A healthy yet flavorful breakfast!

6-8sweet mini peppersdiced
8largeeggs
¾cupmilk
1cupshredded Mexican style cheese
Instructions
Preheat oven 400°F.
In a medium mixing bowl, whisk eggs and milk. Set aside.
Heat skillet on medium heat. Once heated, add oil to the skillet.Add turkey and cook to brown the meat. Break up the larger chunks with a wooden spoon or spatula while cooking. Continue to cook until fully cooked and no pink is visible.
After the meat is browned, stir in the taco seasoning then peppers.Add the egg mixture to the skillet. Cook until the edges start to set. About 8 minutes.
Transfer to the oven and bake 10-15 minutes. Add shredded cheese to the top of the egg mixture. Bake for approximately 5 more minutes or until the center is fully cooked and set and cheese is melted. Let cool slightly and serve warm.
Store leftovers in an airtight container in the refrigerator for 3-4 days.
