Cheddar Mashed Potatoes

An easy side dish made with Yukon potatoes and white cheddar cheese.

Equipment

  • large pot
  • stand or hand mixer

Ingredients

  • 4 cups Yukon gold potatoes
  • 1 cup white cheddar cheese shredded
  • ¼ cup heavy cream, half and half, or milk
  • 4 tbsp butter cubed
  • 2 tsp horseradish I used creamed horseradish
  • salt and pepper to taste

Instructions

  • Bring the pot of water to a boil over medium-high heat.
    While you wait for the water to boil, peel and cube the potatoes.
    Once the water boils, add the potatoes. Cook to very soft (15-20 minutes). A fork should pierce through the potatoes easily.
    Strain the potatoes.
  • To a stand mixer, add potatoes, cheese, milk, butter, and horseradish. Whip the mixture until soft and thick. Season with salt and pepper to taste.
    Serve.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
