4cupsYukon gold potatoes
1cupwhite cheddar cheese shredded
¼cupheavy cream, half and half, or milk
4tbspbuttercubed
2tsphorseradishI used creamed horseradish
salt and pepperto taste
Instructions
Bring the pot of water to a boil over medium-high heat. While you wait for the water to boil, peel and cube the potatoes.Once the water boils, add the potatoes. Cook to very soft (15-20 minutes). A fork should pierce through the potatoes easily. Strain the potatoes.
To a stand mixer, add potatoes, cheese, milk, butter, and horseradish. Whip the mixture until soft and thick. Season with salt and pepper to taste. Serve.
Store leftovers in an airtight container in the refrigerator for up to 5 days.
