Equipment

  • cookie sheet
  • lemon zester or grater
  • medium mixing bowl

Ingredients

  • 1 lemon zest and juice
  • 1 ripe banana mashed
  • cups old fashioned rolled oats gluten certified if necessary
  • ½ cup almond butter
  • 3 tbsp date paste see recipe in notes
  • 1 cup blueberries fresh or frozen

Instructions

  • Preheat oven 350°F.
    Spray a cookie sheet with nonstick spray. Or line cookie sheet with parchment paper or a silicone mat. Set aside.
  • Zest then juice lemon.
  • In a medium mixing bowl, mash the banana. Add oats, almond butter, date paste, and lemon juice. Mix well.
    Gently stir in blueberries and lemon zest until incorporated.
  • Spoon batter onto prepared cookie sheet.
    Bake 10-15 minutes. Let cool before transferring or serving.
  • Store in an airtight container in the refrigerator for 3-4 days.
