Easy Sheet Pan Easter Dinner

Easter dinner for 4 made on two sheet pans that is ready in just 1 hour! With ham, cheesy au gratin potatoes, lemony asparagus, seasoned brussel sprouts, and rolls.

Equipment

  • 2 sheet pans
  • alumium foil
  • 1 small dish

Ingredients

Au Gratin Potatoes

  • 4 Yukon gold potatoes peeled and very thinly sliced
  • salt and pepper to taste
  • 1 cup heavy cream
  • 2 tsp dijon mustard
  • 2 cloves garlic minced
  • ¼ cup shredded parmesan cheese
  • ¾ cup grated fontina cheese or gruyere

Brussel Sprouts

  • 1 pound brussel sprouts halved or quarter the large ones
  • 2 tbsp olive oil
  • ¼ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • tsp paprika

Lemony Asparagus

  • 1 pound asparagus
  • 2 tbsp avocado or olive oil
  • 1 medium lemon zest and juice
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ tsp garlic powder

Ham

  • 4-6 circles ham cut into ½ inch thick circles

Rolls

  • 4-6 dinner rolls see notes

Instructions

  • Preheat the oven to 400°F.

Au Gratin Potatoes

  • Place a large piece of aluminum foil over half of a sheet pan. Fold the edges up to create a barrier that will hold in the ingredients.
    Arrange the thinly sliced potatoes on the foil. Sprinkle generously with salt and pepper.
  • In a small bowl, whisk together the cream, dijon mustard, and garlic. Pour the mixture over the potatoes to evenly coat. Sprinkle with parmesan then fontina cheese.

Brussel Sprouts

  • Arrange the brussel sprouts on the other half of the sheet with the potatoes. Drizzle with oil and toss. Sprinkle with garlic, salt, pepper, and paprika and toss to evenly coat.
  • Place the sheet pan in the oven. Bake for approximatly 45 minutes (flip the brussel sprouts after about 25-30 minutes of baking and put in the asparagus and ham at that time). Bake until the brussel sprouts are crispy and the potatoes are tender.

Lemony Asparagus

  • Meanwhile, on the second sheet pan, place the asparagus on half of the sheet pan. Drizzle with oil and 1½ tablespoon of lemon juice, and toss to coat. Evenly sprinkle on the salt, pepper, and garlic powder. Sprinkle on the lemon zest.

Ham

  • On the other half of the sheet pan with asparagus, add the ham circles. Sprinkle with 1 tablespoon of water or juice (orange, pineapple, etc.). Cover the ham with foil.

Rolls

  • Add the rolls with foil on the bottom if you want to bake/heat them.
  • Place the sheet pan in the oven when you flip the brussel sprouts (after about 25-30 minutes of baking). Bake the asparagus and ham for approximately 20 minutes.

Notes

For the dinner rolls you can use frozen dinner rolls. Make sure you get them out in the morning to ensure they are thawed and risen beforehand. Or you can just use premade rolls such as Hawaiian rolls and warm them prior to serving.
