Whipped Sweet Potatoes

Whipped Sweet Potatoes are a super easy, savory side dish with only a few ingredients that comes together in about 20 minutes. It pairs well with most proteins and makes a great holiday side dish.

Equipment

  • paper towels 2-3
  • stand mixer with a whisk attachment or hand mixer

Ingredients

  • 2-3 medium sweet potatoes
  • ¼ cup half and half or heavy cream
  • 2 tbsp butter
  • ½ tsp salt
  • fresh parsley optional garnish

Instructions

  • Wash and scrub the sweet potatoes.
    Poke several holes (about 4-5 times) in the sweet potatoes using a fork.
    Wet 2-3 paper towels and ring them out to damp. Wrap each sweet potato in a damp paper towel. Place in microwave.
  • Microwave on high 5 minutes. Flip using an oven mitt and continue heating 5-7 minutes or until very soft/mushy.
  • Slice sweet potatoes in half with a knife, scoop out the sweet potatoes into the stand mixer bowl. Discard the skin.
  • Add half and half, butter, and salt to the sweet potatoes.
    Beat on medium-high speed scraping down the sides as needed. Beat until smooth, about 4 minutes.
    Top with a little more butter and fresh parsley if desired. Serve or keep warm until ready to serve.
  • Store leftovers in an airtight container in the refrigerator for 4-5 days.
