Wash and scrub the sweet potatoes.Poke several holes (about 4-5 times) in the sweet potatoes using a fork.Wet 2-3 paper towels and ring them out to damp. Wrap each sweet potato in a damp paper towel. Place in microwave. Microwave on high 5 minutes. Flip using an oven mitt and continue heating 5-7 minutes or until very soft/mushy.
Slice sweet potatoes in half with a knife, scoop out the sweet potatoes into the stand mixer bowl. Discard the skin.
Add half and half, butter, and salt to the sweet potatoes.Beat on medium-high speed scraping down the sides as needed. Beat until smooth, about 4 minutes. Top with a little more butter and fresh parsley if desired. Serve or keep warm until ready to serve. Store leftovers in an airtight container in the refrigerator for 4-5 days.
