Preheat oven to 375°F.Line a baking dish with parchment paper. In a medium bowl, whisk butter, sugar, and vanilla until no lumps appear. Stir in the flour. Press the mixture into the bottom of the baking dish.Bake 12-15 minutes. Meanwhile, combine apples, sugar, cinnamon, and pumpkin pie spice in a medium bowl. Mix until apples are completely coated.
In the same medium bowl as prior used, combine flour, oats, cinnamon, pumpkin pie spice, and salt. Cut in the cubed butter with a pastry cutter or 2 forks until crumbly.
Once the crust is done baking, spread apples evenly over the crust. Then sprinkle the crumble layer over top.Bake for approximately 45 minutes or until the apples are soft and the topping is golden. Let cool then slice into bars. Serve as is or with a scoop of ice cream if desired. Store in an airtight container in the refrigerator for up to 4 days.
