Sheet Pan Chicken and Gnocchi make a quick and simple meal. Just toss chicken, gnocchi, and vegetables together in one pan and roast for an easy and flavorful weeknight meal.
When I discovered you could cook gnocchi in a sheet pan I was mind blown! Sheet pan gnocchi is delish because you get a little more crispiness than when boiling it and when you get a bite with golden, melted parmesan it’s a dream! I love that a whole meal comes together so quickly and effortlessly.
What is Gnocchi?
Gnocchi (pronounced N’YAW-kee) originates in Northern Italy. It is a potato dumpling generally consisting of potatoes and wheat flour. Gnocchi means “dumplings” in Italian. They have a mild potato taste and are light, tender, and airy.
For a healthier option, try Trader Joe’s or Whole Foods cauliflower gnocchi. Delallo brand has gluten-free potato gnocchi as well.

How to Make Sheet Pan Chicken and Gnocchi
- In a small bowl, combine oil, garlic, parsley, thyme, rosemary, salt, and pepper.
- On a large cookie sheet, arrange gnocchi, chicken, zucchini, asparagus, and peppers in a single layer if possible. Pour oil and herb mixture over and toss to coat.
- Bake 20 minutes. Add tomatoes and sprinkle everything with parmesan cheese.
- Turn heat to broil. Broil until cheese is golden and the chicken is cooked through with no pink and the internal temperature is 165°F.
- Serve.
Storage
Store leftovers in an airtight container in the refrigerator for 4-5 days.
