Marinated Mozzarella and Tomato Skewers with colorful tomatoes, fresh basil, and herby mozzarella balls. The perfect two-bite appetizers for your next get-together.
I have had these appetizers in my mind for months now but I only make appetizers when we have people over. Because of Covid-19, I haven’t had anyone over so I was excited to make them when I finally had company!
It is kind of a weird time right now as stores and restaurants are starting to open back up in Colorado. I am starting to get together with some friends and see family. Since I have two little kids, I still want to be careful and cautious, but also want to start having some normalcy again. Anyone else feeling this way? Some days are starting to feel a little more normal.
I have noticed my little girl Avalyn, who is 10 months old, now has stranger danger following Covid-19. She hasn’t been around many people in the last couple of months, now when were are around other people her first reaction is freak out and cry. Then it takes her a little time to get used to them. So we first had to adjust to staying home and not being around people, now it is going to take time to adjust to being around people again. Life is constantly changing and forcing us to adjust.
Ingredients in Mozzarella and Tomato Skewers
- fresh mozzarella, cherry size balls
- multi-colored cherry tomatoes
- fresh basil
- olive oil
- garlic
- sundried tomatoes
- fresh parsley
- red pepper flakes
- salt
How to Make Marinated Mozzarella and Tomato Skewers
Marinade for Mozzarella Balls
- In a medium bowl, combine oil, garlic, sundried tomato, parsley, basil, red pepper, and salt. Mix until combined.
- Add mozzarella and stir to coat. Refrigerate for at least 30 minutes.
Assemble the Skewers
I got these cute bamboo skewers that are great for appetizers (affiliate link). I also used them for Sweet and Spicy Bacon Wrapped Dates.
To assemble the skewers, thread a tomato half through the skewer followed by a basil leaf, a mozzarella ball, then the other tomato half. Depending on size, sometimes I used whole basil leaves, and other times I ripped the leaves in half.
How to Store Marinated Mozzarella
Store leftover marinated mozzarella balls or skewers in an airtight container in the refrigerator for 4-5 days.
Can the Skewers be Made Ahead?
Skewers can be made a day in advance. Place on a plate or platter, cover, and refrigerate until ready to serve.
You can also make the marinated mozzarella a few days in advance then assemble when ready to serve.

Equipment
- medium bowl
- 24 toothpicks or skewers
Ingredients
- 1 clove garlic minced
- 1 tbsp sundried tomatoes packed
- 1 tbsp fresh parsley chopped
- 2 fresh basil leaves chopped
- ¼ tsp crushed red pepper
- ¼ tsp salt
- 7 ounces fresh mozzarella cherry size
- 24 multi-colored cherry tomatoes halved
- 12-24 fresh basil leaves
Instructions
- In a medium bowl, combine oil, garlic, sundried tomato, parsley, basil, red pepper, and salt. Mix until combined.Add mozzarella and stir to coat. Refrigerate for at least 30 minutes.
- To assemble the skewers, thread a tomato half through the skewer followed by a basil leaf, a mozzarella ball, then the other tomato half. Rip large basil leaves in half if necessary.Serve or cover and refrigerate until ready to serve.
- Store leftovers in an airtight container in the refrigerator for 4-5 days.
