Acai Bowl Recipe with Acai Powder

Acai Bowl is made with acai powder, a variety of mixed berries, and bananas, to make a creamy smoothie bowl. Topped with fresh fruit, shredded coconut, and chia seeds. A satisfying summer breakfast or snack that is ready in just 5 minutes!

I got a taste of my very first acai bowl years ago when I was in Costa Rica. Two of my girlfriends and I went there for a little vacation for a couple of days. We rented some stand-up paddleboards one hot, sunny day. I was not an experienced paddleboarder by any means, but I had tried it a couple of times. Paddleboarding is no easy feat with the crashing waves. So we definitely took a couple of spills and got a workout. After we were done, we grabbed an acai bowl for this cute little tiki hut-looking smoothie place. The cold acai bowl was so satisfying and refreshing on a hot Costa Rica day.

So you could say this is the perfect summer breakfast or snack! As soon as summer hits I start craving a smoothie bowl.

What is Acai?

Acai (pronounced ah-sigh-ee) is a berry with a dark reddish-purple color that looks similar to a blueberry. Found in the rainforests of Central and South America and is produced from an acai palm tree. People native to the Amazon have been using acai berries’ health benefits for many years. Acai is considered a “superfruit” as it is packed with fiber, antioxidants, amino acids, and healthy fats.

Acai is available in frozen packs or freeze-dried. For this acai bowl recipe, I will be using freeze-dried acai powder.

I have used both and find that the powdered has a bolder flavor.

What is an Acai Bowl Made of?

An acai bowl is a blended mixture of acai, berries, fruit, served in a bowl with toppings such as fresh fruit, nuts, seeds, and granola. If you like the sound of those ingredients, check out my Healthy Blueberry Breakfast Crisp.

I love the creaminess the milk and yogurt give the bowl. However, 100 percent fruit juice may be used to replace milk if desired. And either milk or juice may be used to replace the yogurt if needed.

How to Make Acai Bowl Recipe with Powder

  1. Prepare Ingredients. Start by preparing your toppings to have them ready to place on your acai bowl.
  2. Blend. Add milk, yogurt, berries, banana, acai, and collagen powder to a high-speed blender. Blend until smooth and creamy (stop and stir mixture when needed).
  3. Assemble the bowl. Pour smoothie mixture into a bowl. Top with sliced bananas, strawberries, blueberries, coconut, and chia seeds. Serve immediately.

How to Make an Acai Bowl Vegan

To make a vegan acai bowl, use vegan-friendly milk and yogurt and omit the collagen powder.

  • granola
  • cacao nibs
  • raspberries, blackberries, or cherries
  • tropical fruit- pineapple, mango, kiwi, or papaya
  • nut butter
  • hemp or flax seed
  • pepita seeds or nuts

Can I use Frozen Acai Puree Instead of Powdered Acai?

Yes, you can use frozen acai puree such as Sambazon instead of powdered acai. I find that the powdered has a more bold flavor, but the frozen gives a thicker smoothie.

Tips for Making Acai Bowl Recipe with Powder

  • Prepare your toppings before you blend so your smoothie bowl doesn’t melt.
  • Use frozen fruit otherwise, it will be more like juice. If using fresh fruit you will have to add ice.
  • Chill the bowl beforehand and serve immediately to prevent the smoothie from melting quickly.

How to Freeze Bananas

I like to have frozen bananas on hand for recipes like this. I simply peel the bananas and place them whole in a single layer in a large Ziploc bag. They will keep in the freezer for up to 3 months.

Equipment

  • high powered blender

Ingredients

  • ½ cup milk plant based
  • ¼ cup vanilla yogurt dairy free plain or honey
  • 1 cup frozen mixed berries
  • 1 medium frozen banana
  • 1½-2 tbsp acai powder
  • 1 scoop collagen powder (optional) omit for vegan

Toppings

  • ½ ripe banana sliced
  • 2 strawberries stem removed and sliced
  • 1 handful blueberries
  • shredded coconut
  • chia seeds

Instructions

  • Start by preparing your toppings.
    Add milk, yogurt, berries, banana, acai, and collagen powder to a high speed blender. Blend until smooth and creamy (stop and stir mixture when needed).
  • Assemble the bowl. Pour smoothie mixture into a bowl. Top with sliced bananas, strawberries, blueberries, coconut, and chia seeds. Serve immediately.

    Hi! I was wondering if a protein powder would work in place of the collagen powder? If so, can you advise how much “one scoop” is? Thanks!

      Yes protein powder will work in place of collagen powder. Im sure vanilla flavor would taste great. I would recommend maybe 2 tablespoons of powder but feel free to experiment and let me know how it turns out!

    The flavor was spot on. Loved it. My only issue was that the resulting mixture had the consistency of a smoothie, not really as thick as I would like. Any suggestions?

      I am glad you like the flavor of the acai bowl. To make it thicker try adding just a tiny bit less milk and yogurt but still enough so it blends well. If that does not fix the consistency add a little bit of ice but not a lot so it doesn’t dilute the flavor. I hope that helps!

      Hi Thomas, this acai bowl recipe is approximately 850 calories. That is with the toppings I have listed and I did that based on 1 teaspoon of chia seeds and 1 teaspoon of shredded coconut. If you added different toppings like granola the calories would differ. If you want specific nutrition info you can input the recipe into a nutrition analyzer such as myfitnesspal or verywellfit.

          Dena, I have not tried freezing it. It should freeze well you just might have to add more liquid when you go to blend it again.
