Grilled Bacon Wrapped Chicken Breast
My dad makes bacon-wrapped chicken breast on the grill all the time too. He is the inspiration for this recipe. The difference is, he usually marinates his chicken in store-bought Italian dressing. I decided to go with homemade dressing because homemade always tastes better! I read the label of my favorite Italian dressing bottle (Brianna’s Italian Vinaigrette) and tried to make one similar. Made with herbs, spices, and parmesan romano cheese.
We are heading to my hometown next week to visit my family and go camping. It will be nice to get out of town after being stuck at home for months due to Covid-19. I’ve never seen my husband so excited to go visit my family, obviously, he is sick of being at home 24/7. We will be camping at Pactola Lake. I have so many great childhood memories there. We used to go boating there all summer long. It’s so beautiful and always what I think of when I think of ” going home.”
Italian Marinade (Dressing)
This marinade can also be used as an Italian salad dressing.
Ingredients in the Marinade:
- avocado oil or olive oil
- apple cider vinegar
- dijon mustard
- sugar
- grated dry parmesan romano cheese
- Italian seasoning
- garlic powder
- red pepper flakes
- parsley
- salt and pepper
How to Make the Marinade
Combine oil, vinegar, mustard, sugar, cheese, herbs, and seasonings in a large bowl. I use these Pyrex Glass Mixing Bowls (affiliate link).
Coat chicken breasts in the marinade, cover and refrigerate for 30 minutes up to 12 hours.
How to Cook Grilled Bacon Wrapped Chicken Breast
- Heat the grill. On medium to medium-high heat.
- Wrap the bacon around each chicken breast and secure it with a toothpick.
- Grill the chicken for approximately 5-7 minutes for direct heat and 12-15 minutes for indirect heat grills. Flip and continue cooking until chicken is cooked through with no pink. Cooking times vary with size, thickness, and grill temperature. The internal temperature should be about 165 degrees F.
- Serve. Take the toothpick out and serve immediately.
How Long do you Cook Bacon Wrapped Chicken?
Each grill cooks a little different so times will vary. I highly recommend using a meat thermometer and cook until the internal temperature is 165 degrees F. This will prevent you from over cooking or under cooking your chicken to give you juicy chicken and crispy bacon.
Can This Recipe Be Made in the Oven?
Yes, this recipe can be made in the oven or on a grill pan on the stove.
To cook in the oven: Preheat oven to 400 degrees F. Place chicken breasts on a sheet pan sprayed with nonstick cooking spray or line with foil. Bake until the internal temperature reaches 165 degrees F (approximately 25 minutes).
What to do with Leftover Bacon Wrapped Grilled Chicken
Grilled chicken wrapped in bacon make great leftovers. Slice the breasts and put them in salads, sandwiches, or pasta dishes.
How to Freeze Bacon Wrapped Chicken Breasts
Freeze marinated uncooked or cooked chicken in a Ziploc bag in the freezer. Thaw completely and cooked as directed for uncooked chicken.
Storage
Store leftovers in an airtight container in the refrigerator for 4-5 days.

- 4 boneless, skinless chicken breasts cut in half
- ½ cup avocado oil or olive oil
- ¼ cup apple cider vinegar
- 1 tbsp dijon mustard
- 1 tbsp sugar
- 1 tbsp dry grated parmesan roman cheese
- 1 tsp Italian seasoning
- 1 tsp garlic powder
- ½ tsp red pepper flakes
- ¼ tsp salt
- ¼ tsp pepper
- 8 slices bacon
Instructions
- In a large bowl, combine oil, vinegar, sugar, cheese, herbs, and spices. Coat chicken breasts in the marinade. Cover and refrigerate 30 minutes up to 12 hours.
- Heat grill on medium to medium-high heat.Wrap bacon around each chicken breast and secure the bacon to the chicken using a toothpick.
- Grill chicken 5-7 minutes for direct heat and 12-15 minutes for indirect heat, flip and continue grilling until completely cooked through with no pink. The internal temperature should be about 165 degrees F (Grilling time depends on size and thickness). Remove toothpick before serving and serve immediately.
- Store leftovers in an airtight container in the refrigerator for 4-5 days.
