Zest the lime. Allow zest to air dry at room temperature or bake on a baking sheet at 175°F for 20-25 minutes or until dried. Combine dried zest, chili powder, cumin, paprika, garlic powder, salt, black pepper, and cayenne (if using). Use as desired or store in an airtight container until ready to use. Use 1½-2 tbsp or seasoning per pound of ground meat.
Store in an airtight container at room temperature for up to 6 months.
