In a medium bowl, melt coconut oil and maple syrup in the microwave. Heat on the melting mode or in 30-second increments until melted. Stir in the vanilla extract.
Add in flour and salt stir until combined. Stir in chocolate chips and cherries.
Scoop dough using a 1½ tbsp cookie scoop then roll dough into balls using your hands. Allow coconut oil to cool before enjoying.
Store in an airtight container in the refrigerator or at room temperature for up to a week.
