Equipment

  • 1½ tbsp cookie scoop

Ingredients

  • ½ cup coconut oil
  • cup pure maple syrup
  • 1 tsp vanilla extract
  • cups blanched almond flour
  • ¼ tsp salt
  • ¾ cup vegan dark chocolate chips or semi-sweet
  • ½ cup dried cherries chopped

Instructions

  • In a medium bowl, melt coconut oil and maple syrup in the microwave. Heat on the melting mode or in 30-second increments until melted.
    Stir in the vanilla extract.
  • Add in flour and salt stir until combined.
    Stir in chocolate chips and cherries.
  • Scoop dough using a 1½ tbsp cookie scoop then roll dough into balls using your hands.
    Allow coconut oil to cool before enjoying.
  • Store in an airtight container in the refrigerator or at room temperature for up to a week.
