Apple Butter Oatmeal Cookies

Ingredients

  • 1 stick butter softened
  • ½ cup sugar
  • 3 tbsp apple butter store-bought or homemade (see notes for recipe)
  • 1 egg
  • 1 tsp vanilla extract
  • cups oats
  • 1 cup gluten-free flour such as Bob's Red Mill 1:1
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ½ tsp salt

Instructions

  • Preheat oven to 375°F.
    Line a cookie sheet with parchment paper or a silicone mat.
  • In a mixer, beat butter and sugar on medium speed until light and fluffy (1-2 minutes).
    Add apple butter, egg, and vanilla. Continue to beat until well combined, scraping down the sides as needed.
  • Stir in oats, flour, baking soda, cinnamon, and salt. Mix until completely combined.
  • Scoop batter onto the prepared cookie sheet using a 1½ tbsp cookie scoop.
    Bake 10-12 minutes or until bottom and sides are golden. Edges will be set and the center will be soft.
    Let the cookies cool 10 minutes on the cookie sheet then transfer to a cooling rack to finish cooling.
  • Store in an airtight container for up to 4 days.
