Instructions
Marinate the chicken breast as desired a few hours in advance. (I used 2 tbsp avocado oil, 2 tbsp lemon juice, and sprinkled with lemon pepper seasoning). Either grill the chicken breast or saute them in a pan until completely cooked through to 165°F.Cool slightly and slice.
Cook the whole grains.Divide all the ingredients between two bowls. To each bowl, add whole grain, arugula, cucumbers, tomatoes, olives, chicken, feta, hummus, and tzatziki sauce.
Serve immediately or store until ready to serve.
Store in an airtight container in the refrigerator for 4-5 days.
