Panera Mediterranean Grain Bowl

Made with whole grains, grilled chicken, vegetables, feta cheese, hummus, and topped with tzatziki sauce.

Equipment

Ingredients

  • 2 chicken breasts
  • 2 cups cooked whole grains example- brown rice, quinoa, barley, etc.
  • 1 cup arugula packed
  • ½ cup cucumbers diced
  • ½ cup cherry tomatoes halved
  • 10 olives kalamata olives
  • 3-4 tbsp crumbled feta cheese
  • 4 tbsp hummus
  • cup tzatziki sauce (homemade or store bought) See Recipe Notes

Instructions

  • Marinate the chicken breast as desired a few hours in advance. (I used 2 tbsp avocado oil, 2 tbsp lemon juice, and sprinkled with lemon pepper seasoning).
    Either grill the chicken breast or saute them in a pan until completely cooked through to 165°F.
    Cool slightly and slice.
  • Cook the whole grains.
    Divide all the ingredients between two bowls. To each bowl, add whole grain, arugula, cucumbers, tomatoes, olives, chicken, feta, hummus, and tzatziki sauce.
  • Serve immediately or store until ready to serve.
  • Store in an airtight container in the refrigerator for 4-5 days.

Notes

Whole grains- you can use frozen or bag mixtures instead of stovetop if desired.
Panera Bread uses plain Greek yogurt and tahini dressing, but I used tzatziki sauce instead.
