Ingredients

  • 1 English cucumber
  • 12 ounces multi-colored cherry tomatoes
  • ½ cup feta cheese crumbled
  • 1 tbsp olive oil
  • 1 clove garlic minced
  • ½ tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • fresh parsley optional garnish

Instructions

  • Slice the cucumber then cut into forths.
    Cut the tomatoes in half.
  • Place cucumber and tomatoes in a medium bowl.
    Add oil, Italian seasoning, garlic, salt, and pepper. Mix until completely combined.
    Add feta cheese then toss gently. Top with fresh parsley, if desired.
  • Serve immediately or chill until ready to serve.
    Salad tastes best served the same day, but if you have leftovers, store in an airtight container in the refrigerator for 3-4 days.
