- 1 English cucumber
- 12 ounces multi-colored cherry tomatoes
- ½ cup feta cheese crumbled
- 1 tbsp olive oil
- 1 clove garlic minced
- ½ tsp Italian seasoning
- ½ tsp salt
- ¼ tsp black pepper
- fresh parsley optional garnish
Slice the cucumber then cut into forths.Cut the tomatoes in half. Place cucumber and tomatoes in a medium bowl. Add oil, Italian seasoning, garlic, salt, and pepper. Mix until completely combined.Add feta cheese then toss gently. Top with fresh parsley, if desired. Serve immediately or chill until ready to serve. Salad tastes best served the same day, but if you have leftovers, store in an airtight container in the refrigerator for 3-4 days.
