Grilled Bacon Wrapped Chicken

Ingredients

  • 4 boneless, skinless chicken breasts cut in half
  • ½ cup avocado oil or olive oil
  • ¼ cup apple cider vinegar
  • 1 tbsp dijon mustard
  • 1 tbsp sugar
  • 1 tbsp dry grated parmesan roman cheese
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • ½ tsp red pepper flakes
  • ¼ tsp salt
  • ¼ tsp pepper
  • 8 slices bacon

Instructions

  • In a large bowl, combine oil, vinegar, sugar, cheese, herbs, and spices. Coat chicken breasts in the marinade.
    Cover and refrigerate 30 minutes up to 12 hours.
  • Heat grill on medium to medium-high heat.
    Wrap bacon around each chicken breast and secure the bacon to the chicken using a toothpick.
  • Grill chicken 5-7 minutes for direct heat and 12-15 minutes for indirect heat, flip and continue grilling until completely cooked through with no pink. The internal temperature should be about 165 degrees F (Grilling time depends on size and thickness).
    Remove toothpick before serving and serve immediately.
  • Store leftovers in an airtight container in the refrigerator for 4-5 days.
