Sometimes I want a salad, but I don’t always feel like eating lettuce. This is one of my go-to side dishes I make all the time. It is a fresh, quick, and easy cucumber and tomato salad perfect for summer. All you have to do is cut some fresh cucumbers and tomatoes, mix together the Italian herbs and oil, and mix it all together with some feta. That’s it! Pairs well with grilled meat or pasta dishes and pairs perfectly with my Grilled Bacon-Wrapped Italian Chicken.

It was 5 years ago, which seems like a lifetime ago. I was a flight attendant and wasn’t yet married with children. Knowing I would soon be quitting to pursue a career working with kids, I wanted to take one last big vacation before giving up my travel benefits. My parents, aunt, and I went on a Mediterranean cruise which stopped in Mykonos. It was one of my favorite and most memorable stops. There we sipped sangria and ate this awesome Greek salad. The salad was so tasty with fresh tomatoes and cucumber. But what made it so good? It had a brick of the freshest feta cheese I have ever had. And eating it with the view of all the cute white buildings with blue doors and the beautiful water made it that much better.
Ingredients in Cucumber Tomato Salad with Feta
- English or other cucumber varieties are fine. If using a cucumber with tough skin you may want to peel it first.
- multi-colored cherry tomatoes
- feta cheese
- olive oil
- Italian seasoning
- garlic, salt, pepper
- fresh parsley
How to Make Easy Cucumber Tomato Salad Recipe
- Cut the vegetables. Slice the cucumber then cut it into fourths. Halve the tomatoes to make everything bite-sized.
- Add oil and seasoning. Place cucumber and tomatoes in a medium bowl. Add oil, garlic, Italian seasoning, salt, and pepper. Toss to combine.
- Add feta cheese. Gently toss then top with parsley.
Serve. That is it, so simple!
Storing leftover Cucumber Tomato Salad
The salad tastes best when eaten the same day. It tends to get watery from the sliced cucumbers. But if you have leftovers, store in an airtight container in the refrigerator for 3-4 days.

- 1 English cucumber
- 12 ounces multi-colored cherry tomatoes
- ½ cup feta cheese crumbled
- 1 tbsp olive oil
- 1 clove garlic minced
- ½ tsp Italian seasoning
- ½ tsp salt
- ¼ tsp black pepper
- fresh parsley optional garnish
Instructions
- Slice the cucumber then cut into forths.Cut the tomatoes in half.
- Place cucumber and tomatoes in a medium bowl. Add oil, Italian seasoning, garlic, salt, and pepper. Mix until completely combined.Add feta cheese then toss gently. Top with fresh parsley, if desired.
- Serve immediately or chill until ready to serve. Salad tastes best served the same day, but if you have leftovers, store in an airtight container in the refrigerator for 3-4 days.
