I have been thinking a lot about gratitude this week. We are in a weird and crazy time with this pandemic. It can feel isolating, many feel fearful, and there are so many unknowns. If we take time to think about the things we are grateful for, it can shift our perspective to joy, hope, and peace. So I am choosing to reflect on the things I am grateful for and not focus on the fear. I encourage you to join me in thinking of 5 things each day that you are thankful for. Gratefulness can change our perspective and shift our focus.
Asian Pears
Asian pears are native to Japan and China where they have been around for over 3000 years. In the United States, the bulk of Asian pears come from California and Oregon. They are high in fiber and potassium and also have vitamin C, vitamin K, and copper. Sometimes called “apple pears” they are mostly available in the spring, fall, and winter. If you are unable to find Asian pears you can use a firm pear or an apple as a replacement in this recipe.
