Apple Crisp Bars (GF & Vegan) with an almond flour crust, sliced apples coated in warming spices, and an oat crisp topping. A wholesome fall treat!
It is now autumn, which I am so excited about! It’s my absolute favorite time of year. Here in Colorado, I have already noticed new fall blooms. Such as mums, pretty yellow shrubs, and grasses popping up. The evenings have cooled slightly and some of the leaves on the trees are slowly turning. Every year around this time, we go to an abandoned brick structure just outside of town to take family pictures. It makes for the perfect photo setting. I try to take new pictures every year because my girls change so much each and every year.
Not only do I love the autumn scenery, but also love all the fall food! Like these vegan apple oatmeal bars. They are a slightly healthier apple treat. Which can be made with either vegan or regular butter and are gluten-free. Apple bars with oatmeal, almond flour, spices, and thin-sliced apples. I highly recommend serving them with a scoop of ice cream. After I made them I was really wishing I had a scoop of vanilla ice cream on top.

Ingredients for Vegan Apple Crisp Bars
How to Make Apple Crisp Bars
- In a medium bowl, whisk butter, sugar, and vanilla until no lumps appear. Stir in the flour. Press the mixture into the bottom of the baking dish. Bake 12-15 minutes.
- Meanwhile, combine apples, sugar, cinnamon, and pumpkin pie spice. Mix until apples are completely coated.
- In the same medium bowl as prior used, combine flour, oats, cinnamon, pumpkin pie spice, and salt. Cut in the cubed butter with a pastry cutter or 2 forks until crumbly.
- Once the crust is done baking, spread apples over the crust, then sprinkle the crumble layer over the top. Bake for approximately 45 minutes or until the apples are soft and the topping is golden. Let cool then slice into bars.

I find the best apples are sweet and mostly red apples. Here are some options:

How to Store Gluten Free Apple Bars
Store bars in an airtight container in the refrigerator for up to 4 days. Bars may be frozen and stored for 3 months.
Reheating Bars
Reheat in the oven at 325 degrees until warm. This is great to do if enjoying the bars a couple of days after making them.
Serving Suggestions
Serve with vanilla ice cream, yogurt, or caramel if desired.

- ¼ tsp pumpkin pie spice cinnamon, cloves, and nutmeg
Crisp Topping
- 4 tbsp butter (regular or vegan) cubed
- ¾ cup almond flour
- ½ cup oats
- 2 tbsp brown sugar
- ½ tsp cinnamon
- ¼ tsp pumpkin pie spice
- ¼ tsp salt
Instructions
- Preheat oven to 375°F.Line a baking dish with parchment paper.
