Hot Honey Chicken is sure to be a favorite chicken dinner! Tender oven-baked chicken coated in a crispy seasoned cornflake crust and drizzled in a sweet and spicy hot honey sauce.
My family and I just returned from a little trip to San Diego. The weather was perfect, the beaches were beautiful, and the food was so good! Even though my girls are little, I want them to see and experience new places.
We stayed in downtown San Diego and I was taken aback by the magnitude of people experiencing homelessness. There were several homeless people down each and every block. My heart is heavy for them and it left me wondering what can be done to help them? I hope and pray, at the very least, they have food to eat.
How to Make the Cornflake Chicken
- You will have three separate dipping stations. To a plate, combine flour, salt, and pepper. Add eggs to a bowl and scramble. To a second plate, combine cornflakes, garlic, parsley, paprika, and cayenne pepper. Mix well.
- Dip each piece of chicken first in the flour mixture, then egg mixture, then finally coat well with the cornflake mixture. Place on a cookie sheet. Continue until all pieces of chicken are coated.
- Bake for approximately 35 minutes or until the internal temperature is 165°F and the chicken is cooked completely through with no pink and the outside is crispy.

- In a small saucepan, combine honey, oil, jalapeno, salt, cayenne pepper, and red pepper flakes. Feel free to add more cayenne, red pepper or another jalapeno. Adjust the spice to your taste!
- Heat on low heat, stirring frequently for 10 minutes. Turn off the heat, let cool slightly.
- Spoon over chicken and serve.
I was originally going to discard the jalapeno coins before serving, but they are really good! The heat level will also vary depending on how hot your jalapeno is.
Storage/Reheating
Store leftover chicken in an airtight container in the refrigerator for 4-5 days. Reheat in the oven until warm and crispy.
Hot honey can be stored in an airtight container at room temperature. Discard the jalapenos if storing for a long period of time.

- Cut any large chunks of fat off the chicken.
