It’s back-to-school season. And back to school looks a little different for everyone this year. All of my friends that have school-age children all have different plans this year when it comes to going back to school. Some have decided to homeschool, some are starting online and will transition to in-person learning, some start with in-person learning, and others will have a later start date. Whatever it looks like for you and your children, this season will take some getting used to and some time to adjust.
During this adjustment period, I thought it would be nice to post meals that can be prepared and on the table in 30 minutes or less. Who doesn’t need quick and easy meal ideas? For the next month, I will be posting quick meal ideas. This taco-stuffed sweet potato is the perfect way to kick off this series. It’s not only quick and easy but also flavorful and healthy too!
How to Make Taco Stuffed Sweet Potatoes
Begin by cooking the sweet potatoes. Try to chose sweet potatoes that are similar in size so cook times are the same. The microwave really is the quickest way to cook sweet potatoes. Sweet potatoes can take up to an hour in the oven. So we are going the easy route.
How to Cook the Sweet Potatoes
- Wash and scrub the sweet potatoes then poke several holes around the skin of the sweet potatoes using a fork (about 4-5 times). This allows the steam to escape.
- Wet some paper towels (about 4) and wring them out until damp. Wrap one damp paper towel around each sweet potato.
- Place wrapped sweet potatoes in the microwave and heat for 5 minutes. Flip the potatoes and continue heating until soft when poked with a fork. Cook time depends on the size and thickness of the sweet potatoes. Mine took about 12 minutes.
- Once cooked, cut a lengthwise slit down the middle cutting about 3/4 of the way. Don’t cut all the way through.
The skin on the sweet potatoes will be soft. If you desire a more crispy skin, you can place them on a cookie sheet and broil in the oven until desired crispiness is achieved.
How to Cook the Meat
- While the sweet potatoes are cooking, heat a medium skillet on medium heat.
- Once hot, add oil then ground chicken.
- Cook the chicken turning and breaking the meat apart periodically.
- Once the meat is almost cooked (some pink is fine) add the juice of one lime and the seasoning. Continue to cook until the meat is browned and fully cooked through with no pink.
- Squeeze additional lime juice over the meat. Serve the meat inside the sweet potatoes along with your favorite taco toppings.

- sour cream
- cheese
- salsa

Chicken Taco Stuffed Sweet Potatoes
Equipment

Ingredients
- 4 medium sweet potatoes
- 1 pound ground chicken
- 2 limes, juiced divided
- 1 tsp chili powder
- ½ tsp garlic
- ½ tsp smoked paprika
- ½ tsp salt
- ½ tsp pepper
- ⅛ tsp cayenne pepper
- recommended taco toppings: lettuce, tomatoes, salsa, sour cream, avocado, etc.
Instructions
For the Sweet Potatoes

Once the meat is almost cooked (some pink is fine) add the juice of one lime and the seasoning (chili powder, garlic, paprika, salt, pepper, and cayenne). Continue cooking until slightly brown and cooked all the way through with no pink. Squeeze lime juice over the meat and serve inside the sweet potatoes. Top with your favorite taco toppings.
- Store leftovers in an airtight container in the refrigerator for 4-5 days.
